Lemon Garlic Zucchini Pasta

Ingredients

  • 8 ounces pasta
  • 2 medium zucchini, sliced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Juice of 1 lemon
  • 1/4 cup grated parmesan cheese
  • salt and pepper to taste

Instructions

  1. Cook pasta according to package directions.
  2. While pasta cooks, heat olive oil in a skillet over medium heat. Add zucchini and cook 4–5 minutes until tender.
  3. Stir in garlic and cook 30 seconds.
  4. Drain pasta, reserving a little pasta water.
  5. Toss pasta with zucchini mixture, lemon juice, and parmesan.
  6. Add a splash of pasta water if needed and season with salt and pepper.
