Ingredients
- 2 medium potatoes (Yukon gold or red), diced small
- 1 tablespoon olive oil
- 1 small onion or 2 scallions, sliced
- 2 cloves garlic, minced
- 3 cups chopped kale (stems removed)
- 1/2 teaspoon salt (or to taste)
- 1/4 teaspoon black pepper
- Optional: red pepper flakes, smoked paprika, lemon juice
Instructions
- Heat olive oil in a large skillet over medium heat. Add diced potatoes and a pinch of salt. Cook, stirring occasionally, for 10–12 minutes until tender and lightly golden.
- Stir in the onion and garlic. Cook for 2–3 minutes until fragrant.
- Add kale to the skillet (it will look like a lot). Stir and cook for 3–5 minutes until wilted and tender.
- Season with remaining salt, pepper, and optional spices. Finish with a squeeze of lemon juice if desired.
- Enjoy as-is, or top with a poached or fried egg for extra protein.
