Cumber-Melon Cottage Cheese Ice Cream

This refreshing twist on a summer treat blends hydrating cucumber and sweet melon with protein-packed cottage cheese for a cool dessert that’s nutritious and delicious.

Ingredients

  • 500 grams cottage cheese (full fat recommended)
  • 1 cucumber, peeled and cubed
  • 2 cups watermelon, cubed
  • 1 tablespoon honey
  • Mint for garnish

Instructions

  1. Cut cucumber and watermelon into cubes.
  2. Combine all ingredients in a blender and blend until smooth.
  3. Pour into a container with a lid and freeze overnight.
  4. Scoop into a bowl or re-blend if the mixture is too hard. Add mint for garnish.
