Ingredients
- 8 ounces pasta
- 2 medium zucchini, sliced
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Juice of 1 lemon
- 1/4 cup grated parmesan cheese
- salt and pepper to taste
Instructions
- Cook pasta according to package directions.
- While pasta cooks, heat olive oil in a skillet over medium heat. Add zucchini and cook 4–5 minutes until tender.
- Stir in garlic and cook 30 seconds.
- Drain pasta, reserving a little pasta water.
- Toss pasta with zucchini mixture, lemon juice, and parmesan.
- Add a splash of pasta water if needed and season with salt and pepper.
