Ingredients
- 2 boneless, skinless chicken breasts
- 1 tablespoon balsamic vinegar (optional)
- 1/4 cup fresh basil, chopped
- 1/4 red onion, finely chopped
- 2 medium tomatoes, diced
- 1 teaspoon dried oregano or Italian seasoning
- 1 teaspoon garlic powder
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt & pepper to taste
Instructions
- In a bowl, mix 1 tbsp olive oil, garlic powder, oregano, salt, and pepper. Coat the chicken breasts with the marinade and let it sit for about 15-20 minutes.
- While the chicken is marinating, combine the diced tomatoes, red onion, fresh basil, balsamic vinegar, and lemon juice in a bowl. Stir gently and season with a pinch of salt and pepper. Let it sit to allow the flavors to meld.
- Preheat the grill or grill pan over medium heat. Grill the chicken breasts for 6-8 minutes on each side, or until the internal temperature reaches 165°F.
- Once the chicken is cooked, let it rest for a couple of minutes. Then top each chicken breast with a generous spoonful of the fresh tomato-basil salsa.
